Extremely plentiful, but not terribly commercial viable, Chum Salmon, or Oncorhynchus keta, can weigh between 6-17 pounds. Because of its mild flavor, this fish is usually exported to Europe for smoking but also is the base for keta canned salmon. They are the last salmon to spawn and travel a grueling 2,000 miles up the Yukon River in order to do so.

Because of their low market value, and because of recent complications in migration patterns due to the building of dams, fishermen often choose not to prioritize them. Moreover, the Hood Canal Summer Run populations and the Lower Columbia River Populations are both listed as Endangered Species.

However, since 2006, the Alaska Canned Salmon Global Food Aid Program has been utilizing keta canned salmon for development purposes worldwide. With programs in Jamaica, Cambodia, Guinea Bissau, Guatemala, and Laos, the state of Alaska is utilizing this abundant resource to aide in disaster relief and food aid projects. With a long shelf life and clear nutritious benefits (protein rich, as well as Omega-3's), the program is mutually beneficial for the state (because they get to use an underutilized food source) and those populations who receive the aide.

Moreover, because of the rise in demand and its inability to meet it, the state has also launched a program using canned herring, which has twice as much Omega-3 fatty acid as salmon. Domestically, keta canned salmon is also available and makes for an economical way to get daily doses of protein and essential fatty acids. Because it is less oily than other salmon species, it has less of a "fishy" taste and can easily be added to salads and sandwiches, without overpowering them with flavor. As with all salmon products, be sure the label reads wild caught, to ensure it wasn't farmed.

An easy recipe are salmon cakes, which combine 18 ounces of canned salmon with 2 cups bread crumbs, 2 beaten eggs, fresh parsley, a half of a red bell pepper chopped, fresh dill, and lemon juice. Form patties with hands and cook in heated oil. Serve over a bed of lettuce, drizzled in olive oil and lemon juice, with a mayonnaise and chili sauce.
